meal plan: attempt number 5967

I know I have written about this before.  Meal planning.  I love it and I hate it.  For some reason meal planning just stresses me out.  Lately there have been a few things that have happened that have made me give this yet another try at meal planning.

Thing #1.  This post by Lemondae Makin’ Mama about cutting down your food budget.  It has been sitting in the back of my head for a while and pops to the surface each time I get groceries.

Thing #2. My friend Elisabeth.  She makes a meal plan every Sunday for the week and then goes and gets groceries on Mondays.  She makes it sound so easy.  She only meal plans Monday-Friday and then they go out usually once on the weekends.  Much more mentally attainable when you cut out the weekends.

Thing #3.  All the things I want to purchase.  I would really like some new furniture.  And a new oven.  Saving for these things would be much easier if I could cut a significant amount of money from our food budget.

Thing #4. All the recipes on my food pinterest board that I rarely make that I want to make.

So, world, here is my attempt to meal plan.  I am writing this on Sunday afternoon and I have a meal plan ready for the upcoming week.  Here it is:

Monday- quinoa salad with chicken or shrimp (both are in the freezer)
Tuesday – crockpot sesame chicken with rice and broccoli (one of the recipes my friend Elisabeth loves – first time trying it!)
Wednesday – omelettes – ham, onions from the garden, peppers
Thursday – burgers on the grill with potatoes and veggies from the farmers market
Friday – sushi bowl salad

So there it is.  Our local farmer’s market is open on Wednesdays so I am going to stop there and pick up my veggies for the end of the week. My goal will be to eat up any leftovers over the weekend!  The other nice thing about only planning for Monday-Friday is that if something comes up (we get invited to someone’s house for dinner or something) we can just push everything back one day.

Hopefully this will work for more than two weeks.  We’ll see.  Michelle has some GREAT meal planning tips that I checked out again today as I was working on the plan.  I wrote down all my plans on my google calendar.  My hope is that when I’m in a food rut (which happens every other week) I can get ideas from recipes I’ve made in the past.

So – here goes!! I hope this works!
